I made this and it is amazing, my new go to for friends, and they love it, maximum effect with minimum effort. I had some chicken left over and made red curry chicken pies, equally delicious. Thank you so much Nagi for ALL your delicious recipes 😁

This was sooooooooo yummy. Hubby and I are both floating around in a cloud of Thai Red Curry Bliss!

In other news, I decided to pick up the fresh ingredients I didn’t have (thai basil, lemongrass & kaffir lime leaves) today (because we’re worth it). When I got back, I took my dog (Minnie Prettypaw for her afternoon walk). On the walk I noticed my neighbours (I live in a pretty good street food neighbourhood) have a giant lemongrass tussock and a glossy, beautiful kaffir lime tree LOL

Oh well – at leat I know where they are next time…

If you are in Mississauga, Ontario you can find the curry paste at PATS Supermarket by Dundas St. East. Honestly I got so excited when I saw the curry paste at the grocery I grabbed some tho it’s not in my market list
